"This coffee comes from smallholders located in the town of Chimhucum high in the Los Altos mountains of Chiapas. Chimhucum, meaning "Two rivers" in the Tzotzil language, as a micro-climate is characterized by a wet and cold climate for much of the year.

Growers here in Chimhucum take great care to respect the land. Coffee is shade-grown and sustainable practices such as composting and water treatment are employed. The farmers here pay equal attention to processing. In this lot, Sarchimor, Caturra, and Catuai varietals were hand-depulped and processed using the semi-washed method. During this process the producers fermented the coffees for between 6 – 12 hours resulting in exceptional fruit sweetness and medium-bright acidity." - Genuine Origin
